上海市杨浦区居民不同季节膳食微量营养素的摄入状况

Dietary micronutrient intake status in different seasons among residents in Yangpu District, Shanghai

  • 摘要: 目的 了解杨浦区居民微量营养素摄入状况及其随季节变化情况,为指导该区营养干预工作提供科学依据。

    方法 分别于2012年春、秋季和2013年夏、冬季各开展一次调查。采用“ 3天24小时膳食调查法”进行膳食调查并对家庭食用油、盐、味精等调味品进行称重,计算居民每标准人日微量营养素的摄入量。

    结果 杨浦区居民4个季节中维生素A、胡萝卜素、维生素B1、维生素B2、烟酸、维生素C、钠、锰、锌、硒的摄入量差异有统计学意义(均P < 0.05)。居民全年维生素A、维生素B1、维生素B2、烟酸和维生素C摄入量 < 平均需要量(EAR)的比例分别占50.9%、69.9%、53.5%、14.8%、38.7%,钙、镁、铁、锌、铜、磷、硒摄入量 < EAR的比例分别占48.2%、34.5%、0.4%、31.5%、1.1%、3.0%、26.5%。

    结论 该区居民微量营养素摄入在4个季节呈现一定的差异性,应重点关注维生素A、维生素B1、维生素B2、维生素C、钙、镁、锌、硒等微量营养素摄入不足的问题。

     

    Abstract: Objective To understand the dietary micronutrient intake status and its seasonal variation among residents in Yangpu District, and provide a scientific basis for local nutritional intervention.

    Methods Nutritional questionnaires were administed as face-to-face interveiws in spring and autum of 2012 and summer and winter of 2013 by trained investigators. The micronutrient intake per person day was calculated based on 3-day 24-hour dietary recall and weight of cooking oil, salt, aginomoto, and other condiments.

    Results The intake differences of vitamin A, carotene, thiamine, riboflavin, niacin, ascorbic acid, Na, Mn, Zn, and Se were statistically significant (Ps < 0.05) in four seasons among residents in Yangpu District. The proportions of intake below estimated average requirement (EAR) of vitamin A, thiamine, riboflavin, niacin, ascorbic acid, Ca, Mg, Fe, Zn, Cu, P, and Se were 50.9%, 69.9%, 53.5%, 14.8%, 38.7%, 48.2%, 34.5%, 0.4%, 31.5%, 1.1%, 3.0%, and 26.5%, respectively.

    Conclusion The residents' intake of micronutrients are different in four seasons in the selected district, and focus should be made on the deficiencies in vitamin A, thiamine, riboflavin, ascorbic acid, Ca, Mg, Zn, and Se.
