Brief Summary of Methylmercury in Non-Aquatic Food and Related Analytical Methods

  • 摘要: 简述国内外目前非水产类食物中甲基汞的含量及其测量方法。报道表明,稻米类食物中甲基汞含量相对于其他非水产类食物中的含量要高,环境因素、基因属性可能是甲基汞向稻米转移的主要影响因素;目前非水产类食物中甲基汞含量测量主要采用色谱光谱或色谱质谱联用技术。但降低仪器使用成本、降低样品处理过程中的复杂性及试剂毒性,提高灵敏度仍是开发新型甲基汞检测技术的关键,随着传感类检测技术的发展,其有望在甲基汞检测方法方面得到广泛应用。

     

    Abstract: The paper briefly described the contamination and detection method of methylmercury (MeHg) in non-aquatic food. Previous reports have shown that MeHg is relatively high in rice than that in non-aquatic food. Environmental factors and genetic properties may influence MeHg transferring from soil to rice. Current detection of MeHg in non-aquatic food is using chromatographic spectrum or chromatography mass spectrometry. The key to developing new MeHg detection techniques lies in the reductions of instrument cost, complexity of sample disposal, and reagent toxicity, as well as the increasing of method sensitivity. With the development of sensor detection technology, it is expected to be widely used in MeHg detection.
